Types of sun-dried tomatoes
For this recipe, we use dried sun-dried tomatoes, not the ones preserved in oil.
These dried tomatoes need to be soaked in water before using. This step softens them and brings back their texture, making them perfect for blending into a smooth dip.
You can find this type of sun-dried tomatoes at Nut House. They have a more concentrated, slightly chewy texture before soaking and a deeper, more natural tomato flavor.

This is different from the sun-dried tomatoes you often find in jars at the supermarket, which are stored in (sunflower) oil and ready to use straight away. Those tend to be softer, more oily, and have a slightly different flavor profile. Because we like to avoid the oils these tomatoes are stored in due to health reasons, we like to choose the dried tomatoes we sell at Nut House.

Soak the sun-dried tomatoes

Place the sun-dried tomatoes in a bowl and cover with water. If you’re short on time, use hot water. Let them soak for at least 15 minutes, until softened.
Prepare the beans

Make sure your white beans are fully cooked and soft. If needed, refer to your separate recipe for cooking white beans from scratch.
Blend everything until smooth

Drain the tomatoes and add them to a food processor together with the white beans, olive oil, garlic powder, black pepper, lemon zest, and lemon juice.
Keep blending until the dried tomatoes are fully blended. The spread should turn an orange color.
Taste and adjust
