With just a few basic ingredients and a food processor, you can make a delicious snack that is naturally sweet, satisfying, and easy to customize.

The base recipe combines Medjoul dates and raw nuts. Dates act as the natural sweetener and binder, while the nuts add texture, healthy fats, and a rich flavor. When blended together, they form a dough that easily sticks together and can be rolled into small snack-sized balls.

Because the ingredients are so simple, this recipe is also the perfect base for creativity. Once you understand the basic ratio of dates and nuts, you can easily adjust the recipe and add your favorite ingredients.

A flexible recipe you can make your own

One of the reasons this recipe works so well is that it adapts easily to what you have at home.

You can experiment with different types of nuts or use only one kind, such as almonds, cashews, or hazelnuts. You can also add dried fruits like mulberries, goji berries, inca berries, or cranberries to introduce new flavors and textures.

If you like a chocolate flavor, simply add cacao powder. Want to turn them into protein balls? Add a scoop of protein powder. You can also tweak the texture while blending by adding a few more dates if the mixture feels too dry, or a few extra nuts if it feels too sticky.

Getting the right texture

For the best result, the dates should be soft and easy to blend. If your dates feel a bit firm, this often happens when they have been stored in the refrigerator.

A simple solution is to take the dates out of the fridge about two hours before making the recipe so they can soften at room temperature.

If the dates are still too firm, you can soak them briefly in hot filtered water. This softens them and makes it easier for the food processor to create a smooth dough.

Tip: don’t throw away the soaking water. It becomes naturally sweet and works beautifully as a base for iced tea.

Once the mixture is blended and forms a sticky dough, simply roll it into balls using your hands. You can make them as big or small as you like. We find that balls of about 25–30 grams are the perfect size for a satisfying snack.

Store the energy balls in an airtight container in the refrigerator for up to three weeks, or freeze them for up to three months.

They make a great snack for busy days, a quick energy boost before or after a workout, or a healthy sweet treat whenever you feel like something delicious.

  4. Place the balls in an airtight container in the fridge for up to 3 weeks or freeze for up to 3 months.
